WHO WE ARE AND WHAT WE DO
Humble Plum Kitchens is a mobile commissary kitchen, licensed in the State of Michigan as a special transitory food unit, i.e. a commercial kitchen on wheels. The kitchen is housed in our faithful 1992 Blue Bird school bus and includes all of the standard amenities that one would find in your standard, loaded commercial kitchen.
The mission of Humble Plum Kitchens is to synergize relationships between food producers, consumers and chefs in order to stimulate a more respectable, healthy and sustainable food system. We work and consult with local farmers, fishermen and ranchers to seek out the best available product and will sometimes forego intended ingredients for those of better quality and freshness. It is our intention to bring you ‘slow food’ that is made with love and inspired by the people who produce it.
The kitchen is owned and operated by Peter Ward and Alex Perlman, recent graduates of the University of Michigan. Peter’s culinary interests started at a young age and have continued to progress with eight years of professional experience from various establishments around Michigan. Alex is the owner of two popular food carts in the Ann Arbor area, The Beet Box, with Natural, California inspired healthy street food, and Cheese Dream, serving gourmet grilled cheeses. Together, the duo rallies around a passion to celebrate food as an experience, promote respect for our food system and make people smile!
The bus is stocked with the following:
- commercial range w. four gas burners, griddle top and oven
- charbroil grill
- deep fryer
- 50 ft3 of refrigeration space
- Pots, pans, utensils and several countertop appliances such as a panini press, coffee maker, toaster, KitchenAid mixer and Hobart meat slicer.
